The idea for the Sustainable Restaurant Association came about, appropriately, over a lunch in 2009.

Our founders, all leading figures in the restaurant and sustainability sectors themselves, felt that busy restaurateurs wanting to improve their sustainability needed a single organisation to turn to for advice on the many subjects sustainability encompasses – a kind of ‘one stop shop’. And so the SRA was born.

Pasta – I’m a carb-aholic and proud. I mainly have wholewheat but I’m a sucker for the more unusual varieties like orecchiette and orzo.

Dried chilli flakes/chilli oil. There are few dishes that don’t benefit from a gentle kick, amazing on a cheap and cheesy pizza.
