It might seem like a straightforward question, but the answer is that sustainability can sometimes be hard to define, for diners and restaurants alike. We make it simple.
Sustainability is about restaurants managing the social and environmental impact of their operations. Committing to sustainability means that restaurants can make a huge difference on issues such as climate change, animal welfare and food waste. And by restaurants communicating what they’re doing, diners are better informed, meaning they can choose to eat at places that share the same values.
We know that even the word ‘sustainability’ is a bit of a mouthful, so we break it down into bite-sized chunks. Think of a tasting menu: three courses comprising 14 perfectly-proportioned portions. We promise it will be easily digestible!
Those three courses are Sourcing, Environment and Society. Take a look at the menu on the right for a taste of what each encompasses.
